Lunch: Chicken with Pineapple Sauce

Well, after today’s skimpy breakfast, I’m proud to say I made it to noon without a mini-binge!  Ok, so I may have started heating everything at 11:55, but hey, I round up.  I actually wasn’t all that hungry between meals, stomach grumbles were starting but I wasn’t ravenous or anything.

Anyway, here’s lunch #2, Day 3, Week 1 SSHE – Pineapple Sauce (1,200 calorie version):

There’s a chicken breast covered in pineapple and a few carrot shreds on top of a huge container of cole slaw and a side of rice pudding for dessert.  The 2,000 calorie version looked identical except the chicken breast was larger.  I looked up the nutritional information for both versions and found there’s only a small (less than 100 calorie) difference between the two meals, so I think SSHE must really ramp up the size of breakfast and dinner, and only moderately increase the lunch for the 2,000 calorie version.

I photographed the cole slaw separately as it was kind of hiding under the chicken and pudding:

This was a lot of cole slaw!  I’d say at least a cup or more.  

I heated up the chicken separately on a salad plate in the microwave, added the cole slaw and opened the pudding and here’s lunch:

This was good!  The cole slaw was fresh and crispy; a bunch of red cabbage, carrots and scallions with a vinegar dressing.  While it would have benefited from heating in the oven instead of the microwave (to crisp the bread crumbs) the chicken was a real (not processed) very moist boneless breast.  I liked the balance of the sweet pineapple topping and the sour vinegar dressing; they complimented each other without competing.

I didn’t know if I’d like the cole slaw without creamy KFC-style dressing, but I can’t say I really missed it.  Also, I’ve noted the portion size of meat vs. veggies on the plate.

The dessert was a show of it’s own.  It was a 4oz container of Kozy Shack brand rice pudding.  I’m always a little wary of packaged puddings and snacks as they usually contain a lot of preservatives, but this time I was pleasantly surprised.  Here are the ingredients: milk, rice, sugar, eggs, salt, natural flavors.  There are no artificial additives, so it’s not shelf stable – keep refrigerated!

This was really really good, nice and sweet and creamy, just like rice pudding should be.  It’s amazing how a 4oz cup of juice is just plain mean but a 4oz cup of pudding is an absolute treat!  My sweetness cravings have been curbed… at least for the time being.
