Here’s dinner # 3 from Part B, Week 1, SSHE – Rosalee’s Stuffed Shells:
The 2,000 calorie version is on the left, with two breadsticks, a third pasta shell, and a larger version of the spinach salad. I toasted the breadsticks while the shells went in the microwave.
The shells were topped with tomato sauce and were filled with an herbed ricotta cheese filling:
Yum, yum, yum!!! My fiance and I agreed this might be our favorite dinner yet. The shells themselves are restaurant quality; it’s amazing how al dente the pasta still is after reheating. I’m sure the ricotta filling was low-fat, but it did not skimp on flavor. There was plenty of dressing for the fresh spinach greens. Even the breadsticks were doughy and delicious!
The whole meal was very filling. It’s hard to believe we’re on a diet!
