Here’s lunch #1 from Part B, Week 2, SSHE – many bean salad:
This is the 2,000 calorie version, the 1,200 calorie version had a smaller serving of beans and a thinner slice of colby cheese. Both came with a full bagel and an orange.
I toasted my bagel and then melted the cheese on top:
I love these kinds of bean salads! It had a bit of vinegar and spices, then many, many beans (hence the name). There was at least black, kidney, garbanzo, green, lima, white, navy, and on and on. While the cup it came in was tiny, the beans made for a very filling lunch.
The bagel was another onion wheat (yay!) and the orange was sweet as always. I want to know where they get these oranges from because I never find any like these at my local grocer. The colby made for a nice treat for cheese addicts like myself.
