Here’s lunch #3 from Part B, Week 2, SSHE – Lasagna Roll-Up:
This is the 1,200 calorie version. The 2,000 calorie version came with three lasagna rolls instead of 2. Both had an alfredo-type sauce and a side salad of cauliflower, carrots, sunflower seeds and a creamy cole slaw-like dressing. The filling of the rolls was similar to Rosalee’s pasta shells from last week:
It had some type of ricotta and herb mixture that was really tasty. The lasagna noodles were perfectly done as usual, despite the reheating process. The alfredo sauce was thick and creamy with plenty of herbs and complimented the rolls nicely. Maybe the yummiest part of this meal was the side salad, I have never had a salad like that but I really enjoyed it!
What this dish lacked in color, it made up for in taste. It was also satisfying, we were full until dinner time!


YUM! My lasagna roll-up actually didn’t lack color, it had dark green spinach lasagna noodles. The filling was very yummy and the sauce too. I added some parm. cheese on top. It came with a little salad of broccoli, carrots and cauliflower with dressing which was like lite cole slaw dressing. It was ok but not spectular (and instead of sunflower seeds there were peanuts). But it was a way to add in some extra veggies so it was good. A filling meal. I will look forward to this one again the next time around!
