Dinner: Garden Patty

Here’s dinner #2 from Part A, Week 3, SSHE – garden patty:

This is the 1,200 calorie version.  The 2,000 calorie version had two garden patties.

I really loved this dish on a summer evening because it has all the makings of what I might eat at a BBQ.  A nice veggie burger with bun, baked beans and potato soup (which I pretended was potato salad).  I wish it would have had some lettuce and tomato and onion slices, but it was good on its own.  I must admit I added a little bit of ketchup – I just had to have it!  The soup was creamy and had good sized chunks of potato and carrots.  While the serving of baked beans was small, it was similar to canned but more fresh with cubed green peppers.

  1. I was actually stuffed after this meal! The garden patty was a nice size, which was a welcome surprise. It was way bigger than the bun but the sandwich still worked. I toasted the bun and added romaine lettuce. The soup was very tasty. The broth was a bit thin, but there were chunks of potato, and good flavor. Everything went very well together. I love soup and a sandwich. The beans were ok, but I am not a big fan of beans to start out with, but they seemed above and beyond your average canned beans. A very yummy dinner!
