Dinner: Lemon Pepper Loaf

Here is dinner #1 from Part A, Week 3, SSHE – lemon pepper loaf:

The 2,000 calorie version is on the left.  It had a double serving of the meatloaf and spinach, but the apple dessert and the twice baked potatoes were the same.  Here’s a close up of the 1,200 version:

The meatloaf was turkey based with a strong but not offensive pepper flavor, but I did not get a strong lemon flavor.  The twice baked potato was half a potato skin with a scoop of mashed potatoes topped with paprika.  I would say the spinach was probably frozen, but I always enjoy spinach so that was ok by me.  I did really like the little apple dessert, it had baked apples spiced with cinnamon and nutmeg, plus blueberries (I’m assuming that’s what the color was from) and walnuts.  All the colors made for a very pretty plate!

I enjoyed this dinner thoroughly.  I always like when I have multiple things to eat, plus it was all very tasty. There was also something homey about the dish, not surprising considering it had both meatloaf and potatoes.

  1. OMG! This was the best dinner yet. My husband (who is only trying bites of my food here and there) agreed, this was the best one he had tasted so far. I put the meat, potatoes and spinach in a baking dish and baked it at 350 for 20 mins. The meatloaf was a nice size square, still moist, with a nice little peppery crispy coating on it. Not very lemon-y, which was ok with me, not a big fan of lemon things. I adored this meatloaf! The mashed potatoes on the potato skin were delicious. Probably the most decadent tasting thing so far. The spinach was a little block of what was surely once frozen but that’s fine with me, it meant it was still fresh tasting. It needed some salt and pepper for my tastes but I know they purposely leave out salt so that’s to be expected. The apple dessert was ok, added something sweet so that was nice, but for sure the meatloaf and potatoes were the stars of this dinner!
