Here’s lunch #1 from Part A, Week 3, SSHE – Quiche & spinach salad:
This is the 1,200 calorie version that came with a quiche square, spinach, carrot and red onion salad, raspberry dressing and a side of rice pudding.
I could eat this every day it was so good. The quiche had plenty of cheese including a crusted top to make it resemble the real thing. It had a little pie crust on the bottom and scallions too. As always, the spinach salad was completely fresh and there was no wilting anywhere. Despite how small the dressing looked, it was more than enough for the salad. And, as previously mentioned, I love this rice pudding!

Another YUM! The quiche was yummy, more cheesy than I expected. The salad was very fresh. Just a matter of preference, I always prefer a balsamic or italian vinagrette rather than a raspberry, but it was ok. I was also surprised that the small amount of dressing was enough for the spinach. And the rice pudding…OMG. I love rice pudding so what a nice treat. It was great! I’m still licking the little container LOL A really good lunch, another meal I will look forward to having again.
