Dinner: Baked Tilapia

Here’s dinner #3 from Part A, Week 3, SSHE – baked tilapia:

The 2,000 calorie version is on the left in this photo.  Both came with a tilapia fillet and mango salsa topping, carrot coins and a wild rice blend.

This photo does not convey how much rice the 2,000 calorie version had.  I would say a cup and a half.  It seemed like an awful lot of rice while the fillets were approximately the same size.  Perhaps a proportional increase in tilapia would have been too expensive so they just made the difference in rice?  

We put the tilapia in the oven due to my fears of putting fish in the microwave, and they came out perfectly done, flaky but not dry.  It was a nice piece of fish!  The mango salsa with cilantro spiced up the dish and the carrot coins added nice color.
