Here’s dinner #1 from Part B, Week 3, SSHE – vegetable chop suey:
The 2,000 calorie version is on the left. Both came with a serving of chop suey with brown rice, an egg roll and mustard dipping sauce. I heated the egg rolls in the oven to get them a little crispy and the chop suey went in the microwave.
Again, this was a lot of rice for the 2,000 calorie version and my poor fiance has eaten so much rice the past two nights I think he’s riced out for the time being. Luckily there is no rice listed for the remainder of the week. Besides that, the vegetable chop suey part was pretty good, a lot of vegetables like broccoli and pea pods chopped fairly small with some kind of gravy. The star was the egg roll which was quite large and did a great impersonation of one from a Chinese restaurant without the grease. The zingy mustard dipping sauce was an appropriate and tasty condiment for the meal. I even skipped the soy sauce!

They were delightful soft almond cookies, perhaps intended to replace the whole fortune cookie thing. It would be a cute touch of SSHE to include weight loss-related fortunes with this entree like, “Good things are coming your weigh,” but alas, we were fortuneless.


Ok..the chop suey not so good. Pretty much tasteless, but I added soy sauce and it was tolerable. The egg roll was really good though, and I cooked it in the toaster oven and it got crispy. The mustard dip that came with it was soooooo yummy. I could have eaten it with a spoon! The cookie was also good, a nice treat at the end.
