Here’s lunch #2 from Part A, Week 3, SSHE – salsa chicken sandwich:
This is the 1,200 calorie version, the 2,000 calorie version had a larger chicken breast.
While nothing in this dish was bad, there was something inherently wrong about it. It’s like the components didn’t go together. There’s a hamburger type bun, a fairly plain chicken breast, then a cup of salsa. It would have been much better if they tried to make chicken mexican wraps or have something like BBQ sauce instead of the salsa or a chicken patty type burger instead of the breast. But as it was, it didn’t mesh well.
The gala apple was terrific though!

Agreed. I found myself REALLY wanting mayo (but that’s kind of not the point, huh?). I also would have preferred a wrap (getting a little tired of buns). I do appreciate that the chicken breast was fresh, and like the others, not rubbery. I often had aspirations of keeping cooked chicken breasts around for making sandwiches and that never seemed to happen (hence why I came to the conclusion that at least at this point in my life I need to buy SSHE food that is cooked for me). Next time around I will perhaps cut up the chicken, toss it with the salsa and maybe some other spices and maybe have it on romaine, and toast the bun to have as bread with the salad.
