Here’s lunch #3 from Part B, Week 3, SSHE – Tortellini Vegetable Soup:

This is the 1,200 calorie version. It came with tortellini in vegetable broth with carrots and onions, spinach salad with onions, carrots, walnut and ranch dressing and a rye roll. The tortellini are submerged, so here’s what they look like:

As I always do with the SSHE soups, I heated them up in a mug to make it look like more. The roll went in the toaster and came out warm and doughy with a crispy crust.
I found that this lunch was very filling and enjoyable!
